Homemade Ferrero Rocher

With a whole roasted hazelnut in the centre, a delectable creamy hazelnut filling around it, and chocolate and crunchy hazelnut pieces all over, this homemade Ferrero Rocher recipe is undoubtedly the tastiest chocolate bonbon ever.

1.Ingredients

  • 2 cup (10oz/284g) roasted hazelnuts
  • ½ Cup (2oz/57g) cocoa powder
  • 2 teaspoon of vanilla extract
  • 1/2 teaspoon salt
  • ½ cup (5oz/142g) maple syrup (agave or honey)
  • 1 cup (6oz/170g) Chocolate, melted
  • 1 cup (5oz/142g) roughly chopped hazelnuts (to garnish)

  1. Place 2 cups (10 oz/284 g) of hazelnuts in a food processor (save 40–45 hazelnuts for the centre) and pulse until the mixture resembles a fine paste.  It takes two to three minutes.
  • Blend for just 20 seconds after adding the cocoa powder, vanilla extract, salt, and maple syrup until the ingredients begin to cling to one another. The mixture must be sticky, not dry. Continue blending if it cannot be shaped.
  • Put a hazelnut in the middle and roll into tiny balls.  To set them, put them in the refrigerator for at least an hour after they are completely rolled.
  • Dip each Ferrero Rocher into the melted chocolate when it has set.  Remove any extra chocolate dip.
  • Coat them all over by tossing them in the chopped hazelnuts.  Put them on a parchment-lined tray.
  • Keep chilled until you’re ready to eat.  In the refrigerator, they will remain fresh for up to three days.

2. Expert tips

  • Use premium chocolate because it will determine how your homemade Ferrero Rocher tastes.
  • Bring the milk to a gentle simmer. The milk is excessively hot and could burn the chocolate if it is boiling. It won’t properly melt the chocolate if it’s not warm enough.
  • Don’t forget to roast the nut. It enhances the flavour.
  • Observe how long each step takes to relax.
  • You can omit the final step with the tempered chocolate, but it will guarantee that the iconic Ferrero Rocher will snap when you bite into it.

3.NOTES

  • To go above and beyond, you may roll the truffles in chopped hazelnuts, let the chocolate solidify into a shell, and then coat them with melted chocolate.  You will require twice as much chocolate if you do that.
  • If roasted hazelnuts are not available, roast them for 6 to 10 minutes at 180° C (350° F) in the oven.
